The experiment was conducted to investigate the stability of two of ascorbic acid derivatives, L-ascorbyl-2-monophosphate-Mg (C2MP-Mg) and L-ascorbyl-2-sulfate (C2S), in shrimp diets during dry-processing, storage and leaching.
