The purpose of this study is to assure the processing suitability of fish sausage made from abundant and migratory fishes such as spotted chub mackerel (Socomber australasicus), eastern little tuna (Euthynnus affinis), and round herring (Etrumeus terres) under conditions without being affected by the high content of lipid.
